OUR FAVORITE SUMMERTIME VEGETABLES

I love this time of year. We’re constantly grilling and gathered out on the patio while we watch the kids play in the yard. Three times this week we’ve had zucchini, squash, and tomatoes that we bought from Aldi’s.

When I make these vegetables, the first thing I do is preheat the oven to 400 degrees and line a baking sheet with aluminum foil. Then, I wash off and slice our vegetables. Once I’ve laid them on the baking sheet I drizzle them with olive oil. I sprinkle them with Italian and garlic seasoning. I also add salt, pepper, and top them off with parmesan cheese. You can use shredded, but I’ve also used grated and they turn out just as delicious. Put the vegetables in the oven for 20-25 minutes or until golden brown.

These vegetables make a perfect side dish for just about anything- chicken, pork chops, steak, or fish.
