Beef and Bean Enchilada Casserole

This is one of my favorite meals. Even the leftovers are delicious!
Ingredients

  • 1 pound of hamburger
  • 1 medium onion (chopped)
  • 1 15-ounce can of pinto beans
  • 1 4-ounce can diced green chiles
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 1 8-ouce carton sour cream
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon garlic powder
  • 8 6-inch corn tortillas
  • 1 10-ounce can enchilada sauce
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350
  2. Lightly grease a 2 quart rectangular baking dish, set aside
  3. Cook beef and onion, drain
  4. Stir in pinto beans, undrained chiles, chili powder, and cumin; set aside
  5. In a small bowl stir together sour cream, flour, and garlic powder until combined; set aside
  6. Arrange half of the tortillas in bottom of prepared baking dish, cutting to fit if necessary
  7. Top with half of the meat mixture, sour cream mixture, and enchilada sauce
  8. Repeat with remaining tortillas, meat mixture, sour cream mixture, and enchilada sauce
  9. Cover with foil and bake about 30 minutes or until heated through
  10. Remove foil, sprinkle casserole with cheese and bake 5 more minutes
