This is one of my favorite meals. Even the leftovers are delicious!
Ingredients
- 1 pound of hamburger
- 1 medium onion (chopped)
- 1 15-ounce can of pinto beans
- 1 4-ounce can diced green chiles
- 1 teaspoon chili powder
- ½ teaspoon cumin
- 1 8-ouce carton sour cream
- 2 tablespoons all-purpose flour
- ¼ teaspoon garlic powder
- 8 6-inch corn tortillas
- 1 10-ounce can enchilada sauce
- 1 cup shredded cheddar cheese
Directions
- Preheat oven to 350
- Lightly grease a 2 quart rectangular baking dish, set aside
- Cook beef and onion, drain
- Stir in pinto beans, undrained chiles, chili powder, and cumin; set aside
- In a small bowl stir together sour cream, flour, and garlic powder until combined; set aside
- Arrange half of the tortillas in bottom of prepared baking dish, cutting to fit if necessary
- Top with half of the meat mixture, sour cream mixture, and enchilada sauce
- Repeat with remaining tortillas, meat mixture, sour cream mixture, and enchilada sauce
- Cover with foil and bake about 30 minutes or until heated through
- Remove foil, sprinkle casserole with cheese and bake 5 more minutes
